Technical Considerations and Operation

Rapid Cooling: To prevent the milk from souring, the goal is typically to cool it to 4°C within 2 hours.
Laser-Welded Evaporator: A special cooling surface at the bottom of the tank facilitates rapid cooling of the milk.
Agitator Shaft: Ensures uniform cooling of the milk throughout and prevents fat from accumulating at the top (cream separation).
