Cheese Cart
A cheese wheel is a stainless steel transport and aging vessel used for draining whey, aging curds, and facilitating pre-boiling fermentation (the development of acidity).
Key Features
Material: Manufactured from AISI 304 grade stainless steel, which meets hygiene standards and is corrosion-resistant.
Drainage System: The bottom section features a perforated sheet for draining whey and a drain valve (tap).
Mobility: Typically features two fixed and two swivel (braked) wheels, allowing it to be easily moved within the facility even under heavy loads.
Design: Usually bucket- or trough-shaped to facilitate easy tipping or emptying of the curd. Some models also include flat lids that can be weighted down to press the curd.
Purpose of Use
Straining: Removing water from the curd.
Resting: Allowing the curd to rest until it reaches the proper consistency (pH level) for cooking.
Transportation: Transferring the cheese curd from the vats to the cooking machines.
